Make-Ahead Christmas Breakfast Casserole

Good morning! Can you believe that I published a blog post?! It’s been several months, and I’d really like to get back into this more in 2021! Anyway, while I was food shopping yesterday for Christmas, I got to thinking that I needed to share our family’s favorite make-ahead Christmas breakfast casserole! My mom found the recipe on Pinterest from tasteofhome.com, served it for Christmas morning one year, and I’ve been making it ever since! It is so easy! You can really plan to make it anytime, but I like to serve it on the morning of special occasions like Christmas, Easter or Father’s Day, or whenever we have overnight guests! I wish I had more pictures of the dish and the process, but this was all I could find on my phone from last year. Here’s the recipe, enjoy!

Amish Breakfast Casserole

Ingredients

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed (We like Simply Potatoes brand)
  • 2 cups shredded cheddar cheese
  • 1-1/4 cups shredded swiss cheese
  • 1-1/2 cups 4% cottage cheese (I’m not a cottage cheese fan, and I promise you can’t taste it once it bakes!)

Directions

  1. Preheat oven to 350 degrees.
  2. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain.
  3. In a large bowl, combine remaining ingredients; stir in bacon mixture.
  4. Transfer to a greased 13×9 inch baking dish.
  5. If you’re prepping ahead, refrigerate a day in advance. Bake before serving.
  6. Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.
